Efficient warewashing is the operational backbone of any superyacht table service operation. The speed at which plates, glasses, cutlery and serving equipment can be cleaned and returned to service directly determines the pace at which courses can be turned around and the working conditions of the galley and stewardess crew during a busy service period.

Warewashing Equipment Categories

Superyacht warewashing installations typically comprise two separate machines: a commercial glasswasher sized for the cocktail and wine glass volume, and a full-size commercial dishwasher for plates, bowls and serving dishes. This separation prevents glass breakage and allows the two workflows to operate independently without conflict.

Commercial vs. Domestic Machines

Domestic dishwashers are not suitable for superyacht professional galley use. A domestic machine's cycle time of 60–90 minutes per load is incompatible with the turnaround demands of a twelve-cover dinner service. Commercial dishwashers complete a full wash and rinse in 90–180 seconds, enabling an entire table setting to be cleaned and returned to service between courses.

Key Specification Parameters

• Cycle time: Standard commercial undercounter dishwashers operate on 90-second cycles; glasswashers can achieve 60-second cycles.
• Rinse temperature: A final rinse temperature of 85°C minimum is required for effective hot-water sanitisation.
• Chemical dosing: Automatic detergent and rinse-aid dosing pumps are standard and must be checked and calibrated regularly.
• Drainage: All machines must drain to a permanently installed waste line with a correctly positioned trap.
• Noise levels: In a compact yacht galley adjacent to accommodation, acoustic performance is a relevant selection criterion.
• Basket types and configurations: Dedicated stemware baskets, cutlery cylinders and compartmentalised plate pegs protect fragile items and reduce repositioning time between cycles.
