What is an Extraction Canopy?
An extraction canopy is a fabricated stainless steel hood above the cooking line in a superyacht galley. It captures heat, steam, grease-laden vapour and combustion products at source and exhausts them through the ventilation duct system.
SOLAS Requirements
SOLAS and flag state equivalents require mechanical extraction above cooking equipment aboard commercial vessels. The minimum extraction rate for a superyacht galley is typically 60 air changes per hour above the cooking line.
Grease Filters
All extraction canopies require grease filters. Baffle filters — formed from folded aluminium or stainless steel — are preferred for superyacht galleys: more efficient at grease capture than mesh filters and significantly easier to clean. Filters should be cleaned weekly during active charter.
Fire Suppression Integration
In most superyacht galley installations, the extraction canopy houses the nozzles of the fixed fire suppression system. Always confirm suppression compatibility when replacing cooking equipment or modifying canopy geometry.
