Why the Combi Oven is the Most Important Piece of Equipment in the Galley

The combi oven — formally a combi-steamer — is the benchmark cooking appliance in professional galleys worldwide and the single most important piece of capital equipment in a superyacht galley. It combines three cooking modes in one cabinet, replaces multiple single-use appliances and enables a level of culinary consistency that no other appliance can match.

The Three Modes Explained

Convection mode circulates hot air around the food. Temperature range typically 30°C to 300°C. Used for roasting, baking, pastry and any application where browning and crisping is the goal.

Steam mode fills the cabinet with saturated steam at 100°C (or below for gentle applications). Used for fish, shellfish, vegetables, eggs and any protein where moisture retention is critical and browning is not wanted.

Combination mode applies both simultaneously — hot air for browning, steam to prevent moisture loss. The most used mode in professional cooking: roasted joints retain moisture, bread develops crust, poultry browns while remaining moist.

Specifying the Right Capacity

Combi ovens are sized in GN (Gastronorm) tray capacity — 6 GN 1/1, 10 GN 1/1 and 20 GN 1/1 are the standard commercial sizes. For superyacht galleys:

• Vessels up to 40 metres — a single 6-tray unit is typically adequate
• 40–70 metres — a 10-tray unit, or two 6-tray units, depending on service volume and charter programme intensity
• 70 metres and above — 20-tray units or twin 10-tray configurations are standard

HACCP Integration

All three major brands incorporate HACCP data logging — recording time-temperature profiles for every cooking and chilling cycle. For commercially operated vessels, this data must be logged and retained. Configure HACCP logging at commissioning; do not rely on crew to activate it manually.
